The main event
Shakshuka for 9.
A deeply tomatoey, gently spicy pan with soft eggs and enough bread for enthusiastic mopping.
For more than 6 people, use two wide pans. Crowded eggs are grumpy eggs.
Build the base
Soften onions and peppers in olive oil for 10 minutes. Add garlic, cumin, paprika and chilli; let everything get fragrant.
Make it saucy
Add tomatoes, season generously and simmer 15–20 minutes until thick enough to hold a little egg crater.
Drop the eggs
Make wells, crack in the eggs, cover and cook 6–9 minutes. Stop while the yolks still have a promising wobble.
Finish with flourish
Scatter feta, herbs and black pepper. Put the whole glorious pan on the table with warm bread.
Pass the aux
One table.
